Ingredients

• 3/4 cup boiled chickpeas

• 1 ripe banana

• 1 teaspoon of baking soda

• 1 teaspoon cinnamon

• 1 teaspoon gingerbread seasoning mixture

• 2 tablespoons tahini

• 4 tablespoons of mulberry extract

• As much oat flour as it takes (about 2 cups)


Optional:

• For more sweetness: Date paste or extra mulberry extract

Preparation

1. Chickpea and Banana Mixture: Crush the boiled chickpeas and ripe banana in a bowl or rondo.

2. Add Spices: Add baking soda, cinnamon and gingerbread spice mixture, mix well.

3. Add Liquid Ingredients: Add the berry extract and tahini to the mixture and mix again.

4. Add Flour: Start adding oat flour slowly. Continue until the dough will not stick to the hand but it gets a soft consistency. If necessary, you can add a little more tahini or mulberry extract.

5. Shape: Roll out the dough with a rolling pin and shape it with cookie molds.

6. Baking: Bake in a preheated oven at 160°C for 20-25 minutes until lightly browned on top.

7. Serve after cooling.
