Ingredients

• 2 cups bone broth with marrow

• 2 cups water

• 1 medium onion (chopped)

• 2 cloves garlic (crushed)

• 2 tablespoons olive oil

• 1 tablespoon tomato paste

• 1/2 cup pearl couscous made from chickpea flour

• Salt and black pepper (to taste)

• 1 teaspoon red paprika (optional)

• 1 teaspoon lemon juice (optional, for serving)

Preparation

1. Sauté Onion and Garlic:

Heat olive oil in a deep pot. Add the chopped onion and crushed garlic, and sauté over medium heat until softened and fragrant.

2. Add Tomato Paste:

Stir in the tomato paste and cook for 1-2 minutes to remove its raw taste.

3. Pour in Bone Broth:

Add the bone broth to the pot, stirring to combine with the onion and tomato mixture. Bring it to a gentle boil.

4. Cook the Pearl Couscous:

Add the chickpea pearl couscous to the boiling soup. Cook over low heat for about 10-12 minutes until the couscous is tender.

5. Season the Soup:

Add salt, black pepper, and optional red paprika to taste. Stir well and adjust the seasoning as needed.

6. Serve:

Ladle the soup into bowls. Add a few drops of lemon juice or garnish with fresh herbs if desired. Serve hot.


Tips:

• For a richer flavor, you can mix tomato paste with red pepper paste.

• If the soup thickens too much, thin it with a bit of hot water.
