Ingredients

40g 85% dark chocolate with date syrup

6 small Iranian dates (pitted)


Pistachio Mixture:


3 teaspoons ground pistachios

2 teaspoons almond butter

1 teaspoon water

1 teaspoon popped amaranth (or quinoa, buckwheat, rice)

1 teaspoon maple syrup, apple juice concentrate, or honey



Preparation

1. Melt the Chocolate:

• Melt the chocolate using a double boiler or in the microwave.

• Pour a thin layer into a mold and tilt to spread evenly.

• Remove any excess chocolate and set aside.

2. Prepare the Pistachio Mixture:

• In a bowl, combine ground pistachios, almond butter, water, popped amaranth, and your choice of sweetener (maple syrup, apple juice concentrate, or honey).

• Mix thoroughly to form a sticky paste.

3. Assemble the Layers:

• Place the pistachio mixture evenly over the chocolate layer in the mold.

• Arrange the pitted dates over the pistachio mixture.

• Pour the remaining melted chocolate on top to cover everything evenly.

4. Chill:

• Refrigerate for at least 30 minutes until the chocolate sets completely.

5. Cut and Serve:

• Remove from the mold and cut into 18 small squares or your desired portion size.




This recipe is a healthy chocolate alternative that will satisfy your sweet cravings! 🍫✨ • If you don’t have popped amaranth, you can use any puffed grain you have or lightly toast quinoa/amaranth in a pan.


• If you don’t have a mold, you can spread the mixture onto parchment paper instead.


Each of the 18 small squares will contain approximately 55-60 calories per square.
